Sunday night football means lots of alone time for me in the kitchen to make goodies 🙂
I tried to start watching the first game today (spoiler alert: RIP green bay), but got too bored to continue……turns out 5 minutes of football time is actually 2 hours of regular time. Needless to say I got distracted and made chocolate mousse instead!
This is a really easy recipe and only takes 5 min to make (aside from fridge time). Dairy-free, refined sugar-free, gluten-free, vegan, etc.
1 can coconut milk, chilled in the fridge overnight – I’ve tried this with many different brands but the one that yields the best results is Earth’s Choice – regular (not light)
1 tbsp maple syrup (or to taste)
2 tbsp cocoa powder
Canned coconut milk naturally separates in the fridge when chilled. When you open the can, you’ll find the delicious coconut milk solids are at the top, with the liquid part underneath. It is the white top solids you want for your mousse – they have the consistency of butter.
Scoop out the solid coconut milk and place in a bowl. Slowly add your maple syrup, then cocoa powder. Stir it all together with a spoon and eventually you will have this:
It takes on a whipped mousse consistency and is delicious! This can easily be used as an icing for cupcakes, or as coconut whipped cream (omit the cocoa powder) to put on pie or hot chocolate.
