Pad Thai is such a delicious dish, but depending on your dietary lifestyle it might not be easy to indulge in it that often. Enter – Kelp Noodle Pad Thai πŸ™‚ My own version of pad thai that I make at home when I’m craving that delicious peanut thai flavour. Using kelp noodles instead of pasta eliminates gluten and wheat, adds delicious crunch and a source of iodine (nourishing to your thyroid gland). Instead of chicken, I cut up tempeh – a fermented soy product rich in probiotics and protein. Gluten, wheat, dairy and sugar free. Try it out for yourself!

Ingredients
1 package Kelp Noodles – they are stringy and come in a pouch with water – drain off the water then rinse the noodles. Kelp noodles are a raw food so you can eat them raw or cook with them and they still retain their crunchiness.
1-2 tbsp peanut butter – find one where the only ingredient is peanuts!
ginger – I use a small dice-sized amount and finely chop it.
1 clove garlic – finely chopped
soy sauce – enough to taste. I usually end up using 2-3 tbsp in the pan.
2/3 block of tempeh – I use the brand Henry’s and cut it into small cubes.
water or almond milk – to diluteΒ the sauce

Recipe:
1. gingertempehOn medium heat, pour 1/3 cup water into a skillet, along with desired amount of soy sauce (add more or less depending on how salty you like your sauce). Start prepping your ingredients – chop ginger, garlic and tempeh

2. Put all chopped ingredients into your pan and let simmer until flavours infuse, and ginger and tempeh become soft – usually takes around 10 minutes.

3. When ingredients are simmered, add in your peanut butter. I like to use 1 heaping tablespoon. Peanut butter will begin to melt once it is introduced to the heat, creating a nice thick sauce. Stir everything together and turn down heat to low. At this point taste your sauce and add more water/milk or soy sauce depending on how salty (or not salty) you want it.

4. Once the sauce is your perfect thickness and taste, add in the kelp noodles!

5.Stir everything together until noodles are covered in pad thai sauce. Transfer into a bowl, garnish with chopped peanuts and enjoy your creation πŸ™‚pad thai
