Chocolate-Pumpkin cupcakes with Orange Cinnamon Frosting

DSC07811Ok, I’ve been on a dessert streak lately….basically I’m craving everything to do with chocolate, pumpkins, and desserts. Normally I would take my time and come up with something simple and nutritious but I was in Loblaws the other day and saw cake mix on sale for a ridiculous 99 cents….so I went for it. Yes, even RHN’s buy regular cake mix, haha! But I did jazz it up a bit….

Chocolate-Pumpkin Cupcakes with Orange Cinnamon Frosting


Chocolate cake mix…..or make your own if you’re not in a hungry rage like I was. Replace quantity of oil with same quantity of pureed pumpkin (1:1 ratio)

Frosting: 1 cup Icing sugar, juice from one small orange, 3 dashes cinnamon, 1 tbsp softened Earth Balance butter spread (haven’t bought butter since watching Cowspiracy!)

1. Prepare cake as directed on label, substituting the quantity of oil for same quantity of pureed pumpkin. Pour into cupcake moulds and bake for required time.
2. Meanwhile, combine frosting ingredients in a separate bowl and beat together with a fork.
3. Once cupcakes are done, allow them to cool. Spread frosting on top in desired thickness, and enjoy!


*Want a more traditional buttercream frosting? Increase the amount of butter you use in the recipe, add a dash of vanilla extract and use cream as the liquid ingredient to bind it all together*
